Decoding The Fascinating Secret Language Used By Sushi Chefs

While there exists a strict dining code in Japanese culture, the invisible barrier between sushi chefs and their customers have also prompted the formation of a fascinating secret language understood by the crew behind the counter.

Intrigued by this hidden world of terminology and dual meanings, the team at First We Feast explores the variety of terms, which include the onomatopoeia-inspired word “Gari”, meaning ginger, and “Agari”, which refers to green tea, but also often served to customers at the end of a meal as a subtle signal for them to leave.

Check out some of the slangs below and read the full article here.

Agari: “The green tea served after a meal. It is also a term used by servers and chefs when they notice that a customer is about to finish their meal. It can also be a wordless signal for unwanted customers.”

Geta: “The word for Japanese sandals, but in a traditional sushi bar, it is the wooden serving plate.”

Numbers (Pon, Ryan, Geta): “To avoid indecency, sushi chefs have a different system of numbers they communicate with.”
